hourIngredients
2 Cups All purpose flour
1 Teaspoon Bicarbonate of Soda
3/4 Teaspoon Cinnamon
1/3 Cup Natural Yogurt
2 Large Eggs
4 Bananas (ripe, large)
1 cup of Raisins
1/2 Cup Butter
1 Teaspoon Vanilla
3/4 Cup Brown Sugar
Directions
- As always, start with preheating the oven to 180 degrees Celsius. Also grease your Bread pan and lightly dust it with flour. 😊
- Sieve together the flour, baking soda and cinnamon powder. 😊
- You’ll need at least 3 large ripe bananas. If they are a bit smaller or medium sized, you’ll need 4. 😊
- Mash the ripe bananas in a bowl with a fork. Also, measure out the yogurt and raisins. 😊
- Cream together the butter and brown sugar in a bowl. 😊
- When the sugar and butter is creamed well, add the eggs one at a time. 😊
- Then mix in the yogurt, bananas and vanilla. 😊
- Mix in the flour, a little at at time until well combined and then also fold in the raisins. 😊
- Transfer the mixture to your dusted loaf pan, and bake the loaf for 1 hour in the middle rack of the oven. Test with a skewer in the middle of the loaf and if it comes out clean, then the banana bread is ready. 😊
- Allow the loaf to cool completely on a wire rack before proceeding to slice the loaf. In fact, the loaf tastes better after a couple of days or so, as opposed to eating the loaf immediately. 😊
- Slice the loaf and serve as desired, with your favourite cuppa tea! Enjoy! 😋
