Let’s talk about Banana Bread!

This delicious loaf is perfect for breakfast or afternoon tea, on any day. And now that it’s a little cooler, we are certainly drinking more hot beverages than usual ☕️….why not pair that with a couple of banana bread slices? 😋

This recipe gives you a moist and delicious loaf, that’s just right and not too sweet. You can add a glace to this, or serve it the way as is 😊. It’s also the perfect way to make use of excess or over-ripe bananas 😉.

Ingredients

  • 2 Cups All purpose flour

  • 1 Teaspoon Bicarbonate of Soda

  • 3/4 Teaspoon Cinnamon

  • 1/3 Cup Natural Yogurt

  • 2 Large Eggs

  • 4 Bananas (ripe, large)

  • 1 cup of Raisins

  • 1/2 Cup Butter

  • 1 Teaspoon Vanilla

  • 3/4 Cup Brown Sugar

Directions

  • As always, start with preheating the oven to 180 degrees Celsius. Also grease your Bread pan and lightly dust it with flour. 😊
  • Sieve together the flour, baking soda and cinnamon powder. 😊
  • You’ll need at least 3 large ripe bananas. If they are a bit smaller or medium sized, you’ll need 4. 😊
  • Mash the ripe bananas in a bowl with a fork. Also, measure out the yogurt and raisins. 😊
  • Cream together the butter and brown sugar in a bowl. 😊
  • When the sugar and butter is creamed well, add the eggs one at a time. 😊
  • Then mix in the yogurt, bananas and vanilla. 😊
  • Mix in the flour, a little at at time until well combined and then also fold in the raisins. 😊
  • Transfer the mixture to your dusted loaf pan, and bake the loaf for 1 hour in the middle rack of the oven. Test with a skewer in the middle of the loaf and if it comes out clean, then the banana bread is ready. 😊
  • Allow the loaf to cool completely on a wire rack before proceeding to slice the loaf. In fact, the loaf tastes better after a couple of days or so, as opposed to eating the loaf immediately. 😊
  • Slice the loaf and serve as desired, with your favourite cuppa tea! Enjoy! 😋
