Banana Muffins

It’s been raining a lot in these parts, and when you get weathered in…there’s nothing like a hot cuppa tea with a freshly baked muffin 😊… while watching the rain fall outside, of course. That’s my happy place…💕

I made these banana muffins on one such day, and was delighted with the results! I’m sure you will enjoy them too 😊

Here’s what I did :

Ingredients

  • 3 large Bananas, ripe

  • 1 large Egg

  • 1/3 cup melted Butter (unsalted), or Vegetable oil

  • 1 teaspoon Baking powder

  • 1 teaspoon Bicarbonate of Soda (Baking soda)

  • 1 1/2 cups All purpose Flour

  • 3/4 cup Brown Sugar

  • 1/2 teaspoon Salt

  • 1/4 teaspoon Nutmeg

  • 1/4 teaspoon Cinnamon

  • 1/2 teaspoon Vanilla

Directions

  • First and foremost, preheat the oven to 190 degrees Celsius. 😊
  • Then, peel the 3 ripe bananas, and also melt the butter, if using that instead of oil. Melt it, but don’t let it boil 🙂
  • In a large bowl, mash the bananas into a paste, using a fork. To the mash, add the sugar, butter (or oil), spices and vanilla extract. Mix well. 😊
  • Once that’s done, break in the egg and mix it in until fully combined. Set aside.
  • Sift the dry ingredients together, that is flour, salt, baking soda and baking powder into a container.
  • Then gradually add the sifted flour to the wet mixture, and fold in a little at a time. 😊
  • Combine well, but don’t over-mix. 😉
  • I typically use paper muffin cups when I bake muffins, but if you don’t have those, you can just grease the muffin pan well and dust the inside with flour, for easier removal. 😊
  • Using a Tablespoon or ice cream scoop, proceed to fill each cup with some batter. With the measurements we used, this should yield about 12 medium sized muffins. 😊
  • Bake on the middle rack of the oven for about 30 – 35 minutes.
  • Your muffins are done when you pierce the center with a skewer or fork, and it comes away clean. Allow them to cool in the pan for about 10 minutes, then they’re ready to serve and eat! Enjoy! 😋💕
