Howdy folks! 😊

Without hating on Vanilla or Red velvet flavours, the Lemon and Poppy seed combination really does touch my heart 💕. The burst of citrus and tang from the lemon🍋 , the nuttiness from the poppy seeds and the delicious frosting is a match made in heaven, sure to overcome the senses. 🤩

Lemon & Poppyseed Cupcakes

  • 1 1/4 cup All purpose Flour

  • 1 1/2 Teaspoons Baking powder

  • 1/2 cup unsalted Butter

  • 1/4 Teaspoon Salt

  • 1 cup Castor sugar

  • 1/2 cup Natural Greek Yogurt

  • 2 Eggs

  • 1 1/2 Tablespoons Poppy seeds

  • 1 Teaspoon Vanilla essence

  • 1/4 cup fresh Lemon Juice

  • Zest of 3 Lemons

  • Buttercream frosting
  • 1 cup/250g Butter

  • 500g Icing Sugar

  • Fresh Lemon juice (3 Tablespoons or Juice of 1/2 lemon)

  • Zest of 2 Lemons


  • Preheat the oven to 180 degrees Celsius and line your muffin pan with paper muffin liners. 😊
  • Proceed to seize allthe dry ingredients together : Flour, baking powder, salt and the poppy seeds. Set aside once done. 😊
  • In a separate bowl, Cream together the butter and sugar, and adding the egg in till completely incorporated. 😊
  • Next, add in the yogurt and combine.
  • Mix the flour mixture into you’re wet ingredients, in 3 parts. Mix, but don’t over mix! 😊
  • Using a scoop, fill the muffin cups with the batter and bake for about 15 minutes- or until an inserted skewer comes away clean. 😊
  • Once baked, allow the cupcakes to cool completely on a wire rack before frosting. 😊
  • For the frosting, beat together the butter and lemon juice for about a minute, and then gradually start adding in the icing sugar to the mixing bowl. Beat on medium for about 2 to minutes longer or until the frosting is smooth, light and fluffy. 😊. You can also use lemon essences as a substitute, in case you run out of lemons 😉.
  • Use a piping bag with your favourite tip, if you can, to pipe the frosting onto the cupcakes. 😊
  • Garnish with some leftover poppy seeds and a little lemon zest for a hint of yellow and a professional look. 😊👌🏾
