Ginger Biscuits

Ginger biscuits are among the very first biscuits I learned to make decades ago, in my mothers kitchen 😊. I remember it being a fun project that we worked on and got to eat at the end of the process.

One of my siblings burnt their batch 🤭, but for the sake of their good standing in society, they will remain nameless in this post 😌.

This is an easy recipe that you can make if you’re just starting out in baking cookies. Or if you want to make some memories and have a fun activity with the whole family helping 😊.

The Ginger flavor really does make these cookies unique and delicious! And I’m sure they’ll be hard to forget 😊👌🏾

Ginger Cookies

Ingredients

  • 2 1/2 cups Flour

  • 100g Butter

  • 2 Eggs

  • 1/2 Cup Golden syrup

  • 3/4 cup Brown Sugar

  • 2 teaspoons Bicarbonate of Soda

  • 2 Teaspoons Creme of Tartar

  • 1 1/2 Tablespoon ground Ginger

  • Pinch of salt

Directions

  • As always, we start by sifting all the dry ingredients together 😊 : Flour, Ginger, Salt, Bicarbonate of Soda and the Creme of Tartar.
  • Next, in a small saucepan, melt the butter together with the Golden syrup. You just want it to melt together and get combined, but we are not leaving it to start boiling. Remove from the heat and allow the syrup to cool. 😊
  • In a bowl, mix together the brown sugar and the eggs, with a wooden spoon, until combined. 😊
  • Pour in the cooled butter and Golden syrup mixture and combine well. Should look like this…😊
  • Next, start adding the flour mixture slowly to the wet ingredients and combine well. No lumps, please 😊
  • The combined mixture should look like a smooth, light peanut butter 😊. Cover this with plastic wrap and refrigerate for at least 3 hours. This is for the dough to solidify enough to be handled by hand.
  • After refrigeration, the texture is more like a dough and firmer to the touch 😊. You can use a spoon to take up small amounts, and roll them by hand into small balls.
  • Measure about a teaspoonful of the dough and roll it into a ball with your hands. Then lightly roll the ball into some white sugar to coat it all over. This should be a fun exercise for the kids 😉. While doing this, Preheat the oven to 180 degrees Celsius.
  • After coating, place each ball onto a parchment paper lined baking tray. Flatten the top of each ball slightly with your thumb or a spoon. Remember to have enough space between each biscuit to allow for them to spread. 😊 Bake for 10-12 minutes.
  • The biscuits should come out looking like this after 10 minutes….😊
  • Use a spatula to remove the biscuits from the parchment paper and transfer them to a wire rack to cool. 😊
  • Serve and Eat as soon as they are cold. Enjoy! 😊💕
  • P.S Store any Left-overs in an airtight container.

  1. Preheating the oven shouldn’t be done so early as rhe dough goes in the fridge for 3 hrs but this looks amazing I will try it out thank u

    • You know what? Thanks for that observation. You’re so right. 🙂 I will adjust that…I used to have this habit when baking where I’d start mixing everything and find at the end I’d forgotten to pre-heat the oven! To stop that now, its the first thing I do! lol. That’s where this came from 😉
