I just s love how easy and convenient to make Pasta dishes are. Not to mention delicious! 😋

Pasta really is a blank canvas you can take in so many different directions. This one went the ‘Italian’ way, resulting in a fresh tasting dish – thanks to the Tomato, and the addition of fresh Basil and Parsley. With that combination, you can’t go wrong 😊

You can also add some grated cheese for some extra pizazz, or you can let the fresh ingredient shine by themselves. Either way, you win.

Chicken Tomato Penne

Ingredients

  • 2 Chicken breasts, cubed

  • 300g Penne pasta, cooked

  • 3 Tablespoons Olive oil

  • 1/2 Teaspoon Salt

  • 1/2 Teaspoon Pepper

  • 3 cloves Garlic

  • 2 Teaspoons Smoked Paprika

  • 1 medium Red onion

  • Fist full of fresh Basil

  • Fist full of Parsley

  • 1 Large Tomato

  • 1 tablespoon Tomato Paste

  • 1 tablespoon Soy sauce

Directions

  • Start by cutting up the Chicken breast into bite-sized cubes and transfer to a bowl. To that, add a Tablespoon Olive Oil, salt and 1 grated clove of Garlic. Marinate for at least 1 hour. 😊
  • Heat up some Olive oil and fry the chicken breast until it is no longer translucent. This should be about 7 minutes or so. Season with smoked paprika and black pepper. Set aside on a plate. 😊
  • Chop up the remaining ingredients – Onion, Garlic, Parsley and Basil. And the Tomato (not pictured). 😊
  • In the same pan, sauté the Onion and Garlic – and then add the Tomato 3 minutes later. Cook until soft. Add to that the tomato paste and 1 cup of water, and allow the sauce to come together. 😊
  • Once the sauce comes together, return the chicken cubes to the pan to cook in the sauce for about 3 minutes, allowing the chicken flavour to permeate the sauce. 😊
  • Then add the roughly chopped basil and parsley to the pan and a Tablespoon of soy sauce. Cook for only 2 minutes. 😊
  • Then, add the cooked pasta to the pan. 😊
  • Combine well to make sure the pasta is fully coated in sauce and the chicken evenly distributed. 😊
  • Let that cook for a couple of minutes, and then the dish is done! 😊 You can add a bit of cheese on top if you like, or just garnish with leftover herbs. enjoy! 😋
