Beetroot & Green Bean Salad

In all our quarantine cooking, let’s not forget that vegetables are good for our health! 🙈

And in line with that, here’s one of my simplest (and prettiest 😉) salad recipes.

Vegetables don’t have to be boring! And these mixed vegetable salad on a bed of lettuce is Crisp and Delicious! 😋

Love to serve this salad when I have company, or just with a lazy Sunday lunch. It’s so easy to make – 6 ingredients, and you’re ready to eat! 😊

An Easy, Delicious and Pretty salad you’ll enjoy with with any meal!

Ingredients

  • 3 Medium sized Beetroots

  • 3 Medium sized Carrots

  • 300g Green Beans

  • 300g Fresh Lettuce

  • 1 cup Feta Cheese cubes

  • 1/2 Cup Salad dressing/ Light Greek/Italian

Directions

  • Start by washing and peeling the beetroot, and cutting them into wedges. Some people eat beetroots with the skin on, so you can go with your preference here. 😊
  • Cook the wedges for 10 minutes in a sauce pan with a little water, and 1/8 teaspoon of salt. Once ready, drain any excess water and allow to cool. 😊
  • Next, depending on how long the green beans are, cut them in half or about 3cm lengths. Cook them in a sauce pan for about 10 minutes, also with some salt. Once ready, drain any excess water and allow to cool. 😊
  • While the beetroot and green beans cooks, use a vegetable peeler on the carrots to get these lovely ribbon strips. Set aside. 😊
  • Wash the lettuce, and make sure it is fresh and crispy. Drain away any excess water. 😊
  • Break the lettuce by hand into bite sized pieces and arrange them liberally on your serving dish.
  • Next comes the carrot ribbons. Arrange them on top of the bed of lettuce. 😊
  • Next up are the green beans. Those go on top of the Carrots. 😊
  • Next – The Beetroot. Again, liberally everywhere on the plate. 😊
  • At this point you can make your own dressing, or use a store bought one 😊. I’ll post a few salad dressing recipes on my day off, but Olive oil, lemon juice, salt and pepper are a great combo. Make sure it’s a good dressing. The salad depends on it! 😉
  • To finish off the salad, add the Feta cheese cubes and then drizzle your salad dressing liberally all over the veggies just before serving. 😊
