Howdy folks! 😊

I can’t begin to describe how tasty – and convenient, these 1 dish salad-meals are. Just like the Chicken couscous recipe, this Greek Pasta salad is a great accompaniment to something else, or it can be a stand alone meal on its own. It does contain all the food groups after all, Start, protein and veg, so its a super time saver! 😊

I usually make these for Sunday lunch, when I just want to relax and not spend too much time fussing in the kitchen 😉.

Ingredients

  • 300g cooked Pasta

  • 1 cup Cherry tomatoes, halved

  • 1 red Onion

  • 1 Green Pepper, chopped

  • 1 Cup black Olives, pitted and halved

  • 200g Feta cheese, cubed

  • Salt

  • Pepper

  • 1 English Cucumber

  • 1 Cup cooked Salami sticks, thinly sliced

  • Fresh Parsley or Coriander, finely chopped

  • 1 cup light light Dressing

  • 1/2 cup cooked ham, cubed (optional)

Directions

  • Start by cooking your pasta, and allowing it to cool while you prepare the rest of the ingredients. 😊
  • Core the cucumber, and dice it finely into small cubes. The core usually has a lot of water, and to avoid it soggying up the salad, I recommend it be removed with the seeds. 😊
  • Also, chop the red onion and green pepper, in similar sizes. 😊
  • Add those to the bowl with the pasta. 😊
  • Slice the olives in half and make sure they sure they are pitted (no seeds). Also cut the cherry tomatoes in half. 😊
  • Next, finely slice the salami sticks and Pepperoni. I decided to use 2 types of cold meats in this recipe, just for variety. 😊
  • Add the chopped meats, Olives and Tomatoes to the bowl. 😊
  • Finely chop the fresh herbs, before adding to the bowl. I used both Coriander and Parsley – and P.S I used a bit more than this, so this is for illustrative purposes only. 😉
  • You can buy the Feta cheese already cubed, or if its a block…then cut it into bite sized cubes for even distribution. 😊
  • Add the fresh herbs and Feta Cheese. 😊
  • Then pour in the salad dressing. A store bought version is good, but you can also make your own from scratch. Will post the recipe later, for a home made version. 😊
  • Combine well, and make sure everything is well coated in the dressing. Taste for seasoning. 👌🏾😋
  • Serve as a side, or as a healthy meal on its own. Enjoy! 😋
