Carrot Cake

Howdy folks! 😊

If there’s a cake I enjoy because I don’t get to eat it everyday – It’s Carrot cake! I like to ‘preserve it’ for special occasions, because of all the love that goes into making it. 💕

With just enough spice from the Cinnamon, I love the texture that the carrots 🥕🥕 bring, and the taste of course 😋. Not overwhelmingly sweet, but coupled with Cream cheese frosting – Heavenly!👌🏾

Anyway, enough talking – You just have to try this recipe! Here’s what you’ll need 👇🏾

Ingredients

  • 2 Cups of Grated/Shredded Carrots

  • 2 Cups flour

  • 2 Cups Brown Sugar

  • 2 Teaspoons Bicarbonate of Soda

  • 1/4 Teaspoon Salt

  • 2 Teaspoons Cinnamon

  • 1 1/2 Cups mild Vegetable Oil

  • 4 Eggs

  • 2 Teaspoons Vanilla Extract

  • Cream Cheese Frosting
  • 1/2 cup Butter

  • 1 cup Cream Cheese

  • 1 1/2 Teaspoons Vanilla essence

  • 4 cups Icing Sugar

Directions

  • Start by greasing your baking pan and dusting it with flour. Also preheat the oven to about 170 degrees Celsius 😊
  • Sieve together, in a bowl, the flour, baking soda, salt and cinnamon until evenly combined. 😊
  • In another bowl, combine the grated Carrots with the sugar, eggs, Vanilla and Oil. Mix until ingredients are well incorporated. 😊
  • Then, to the Carrot mixture, start incorporating the flour a bit at a time, until all is mixed in, without any lumps. 😊
  • Transfer the batter to the prepared baking pan, and then bake on the middle rack of the oven until the top of the cake/s is springy when touched. About 40-50 minutes. Also, insert a toothpick into the center of the cake, and when it comes out clean, then the cake is done. 😊
  • Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool. 😊
  • Prepare the frosting by creaming the butter and cream cheese until creamy. Then add in the Vanilla and gradually mix in the icing sugar, a bit at a time until well combined and dissolved. 😋
  • Proceed to ice your cake, and decorate as desired. I made 2 cakes and layered them, so my cake was quite big…😊
  • Slice and serve as desired. Enjoy! 😋💕

    • I think most folks are afraid to try it cos it seems complicated…but this is a really simplified recipe, with great results!…so please go ahead! 🙂
