Been on a salad 🥗 tip lately, and this is one is my most recent creation – a Tomato Cocktail salad. I believe salads should always be delicious to eat, appetizing to look at and easy to make. And this one is all three! 😊

With a few simple ingredients, you’ll be able to Wow! 🤩 your guests at the diner table with this delicious accompaniment to any meal.

Ingredients

  • 3 cups assorted Cherry/Heirloom Tomatoes

  • 1 Cup seedless Green grapes

  • 1 cup white Cocktail Onions

  • 2 Tablespoons Balsamic Vinegar

  • 1/3 Cup Olive Oil

  • 1/4 Teaspoon Salt

  • 1/4 Teaspoon Black Pepper

  • 1/4 Teaspoon dry Italian herbs

  • 2 Tablespoons chopped herbs – Basil or Parsley

Directions

  • Start by washing the fruits – Tomatoes are fruits after all. And the grapes as well. 😊
  • On a chopping board, and with a sharp knife proceed to slice the tomatoes and grapes in half. Transfer to a bowl. 😊
  • Also finely chop the herbs you will be using. I used Parsley mostly, but fresh Basil is also good with this. Add to the salad bowl. 😊
  • Prepare the salad dressing. In a small bowl, combine the Olive oil, Balsamic Vinegar, Salt, Pepper and Italian herbs. Combine well and add to the bowl. 😊
  • Also add in the cocktail onions at this point. They are usually small in size, so there’s no need to cut these through. Combine until all the ingredients are well coated and allow this to sit for a few minutes to absorb the dressing. 😊
  • Arrange on a platter and serve as part of a meal. Enjoy! 😋
