Pork & Veggie Wraps

Pork & Veggie wraps are perfect for those days when you want an easy and delicious meal without slaving away for hours, at the stove 😊. Especially on weekends, or if you’re working from home.

All you have to do is cook and slice the pork, while the rest of the vegetables are eaten raw. How easy is that? 😉 Good for both adult and kids school lunches (when school reopens), and I promise you these easy wraps will soon become a family favorite! 😋😊

Ingredients

  • 2 Pork neck chops

  • I Green Pepper

  • 1 Red Onion

  • 1/2 Teaspoon Salt

  • 1/2 Teaspoon Black Pepper

  • 1/2 Teaspoon Steak & Chops seasoning

  • Fresh Rosemary sprigs

  • 2 Tablespoons Butter or Veg Oil

  • 1/2 cup Mayonnaise

  • 1 1/2 Tablespoons Mustard sauce

  • 1 Tablespoon Tomato Ketchup

  • 4 Chapatis or Pita Flat breads

  • Juice of 1/2 lemon

  • Fresh Coriander leaves

  • 200g Gouda Cheese

Directions

  • Start by rinsing the Rosemary sprigs, and trim off any excess fat and bone from the pork. Season with salt, pepper and the steak and chops seasoning. 😊
  • Melt the butter in a non-stick pan and add in a few sprigs of Rosemary. Then add the pork chops to the pan 😊
  • Cook the pork chops undisturbed for about 5 minutes on each side. The butter would be nice and brown at this point, and will help the chops to brown 😋. I threw in an extra chop at the last minute for good measure 😊
  • Once that’s done, set the pork chops aside to rest, while you get everything else together. 😊
  • Prepare the rest of the ingredients as shown below. Try to keep the cuts as uniform in size as you can, so they will all fit in the wrap. Julienne the Red onion, Red pepper, Green Pepper and Cheese into strips. Rough chop the lettuce, and use a vegetable peeler for the carrots . 😊
  • For the wraps, I tend to use store bought Chapatis or regular pita bread. But any pliable flat bread could work just fine. These should be at room temperature before you use them, just in case you normally keep them refrigerated. 😉
  • The next part is to prepare the sauce. In a bowl, combine the mayonnaise, ketchup, mustard sauce, salt and pepper.
  • To that mixture, add the juice of half a lemon and some finely chopped coriander leaves. Mix until combined. The sauce is yummy 😋
  • The next step is to thinly slice the pork chops. Once done, set aside the meat strips to prepare for assembly. 😊
  • This is now the fun part! Assembly 😊. Start by laying your Chapati on a flat surface, a board or plate will do. Then, start with the lettuce and add bits of all the vegetables and cheese onto the chapati. Also add a few pork strips and then drizzle with the sauce on top. 😊P.S Don’t put too much sauce as it will seep through and make the wraps soggy. You don’t want them to fall apart. 😕
  • Next, roll up the wraps firmly and cut them in half to pack or serve. Enjoy! 😊😋
