‘Mponda’ – ;-)

Does anyone know what the pictured items are called in English?  😉

Anyway…been eating a lot of these Melon/Pumpkin looking items, now that they are in season. In Kaonde, we call them ‘Machimpa’ but the more commonly known name is the Nyanja one –  ‘Mponda.’

‘Mponds’ are mostly bland or flat tasting, and are typically eaten boiled as is, or with a sprinkling of salt to taste.  I normally follow the steps below to bring some life to this very filling and hearty  food item 🙂

-Boil the Mponda whole until the outer shell is soft enough for a knife to slice through.

-While still hot, Cut it in half and scoop out the seeds with a spoon to discard.

-Then scoop out the flesh, freeing it from the shell, and into a bowl.

-Immediately add some butter (not margerine…though depending on the brand…it may be acceptable), sugar and mix everything well.

-Smooth into a Puree or roughly mixed – the consistency is upto  personal preference.

-If you feel more adventurous, for a real treat – add 1/4 teaspoon Cinnamon, Vanilla essence and Powdered milk. Mix well and Enjoy 🙂
